If you’re looking for a yummy, easy salad to throw together, look no further!

I threw this together for lunch the other day. I’m really rockin’ eating raw this week! I started out with the idea that I’d just eat an avocado for a snack, then decided to be a good girl and make a salad with it. I really enjoyed this! I put it in this gorgeous new bowl I got at Value Village last week. It looked so healthy and sexy and it tasted divine!

This recipe makes enough for 2 salads.

Salad Ingredients:

2 large handfuls of mixed greens
1 avocado – cubed
1/2 medium cucumber diced
1 orange pepper – diced

Dressing Ingredients:

juice from 1 lemon
2 Tbsps healthy oil – I used Udo’s 3.6.9
2 Tbsps nutritional yeast flakes
few shakes of salt – I use Himalayan Pink
1/8 tsp of chilpotle powder

Get a medium sized bowl and put the avo in with a bit of the lemon juice and gently toss to coat. Mix the rest of the dressing ingredients together in a small container. You can add the cucumber and pepper to the avo and pour the dressing on then put it on top of mixed greens that have been put on a plate or you can add the greens as well and coat them all together.

I didn’t do it, but this would be good topped with some pumpkin seeds for extra nutrients and protein. Enjoy the ‘cheezy’, creamy goodness! The yeast flakes taste a bit like cheese and are filled with B vitamins, especially B-12 which is good for vegans to take.
