Are you a snacker desperately looking for some healthy snack ideas?

Here’s a few great snacks made with veggies that I hope you’ll enjoy.

ITALIAN VEGETABLES AND PESTO
Spread regular or sun-dried tomato pesto on thin, round slices of zucchini, wedges of either red, yellow, orange, or green peppers or a combination of the colours for a more attractive presentation. You can add some sliced black olives, finely chopped tomato, and whole pine nuts for garnish if you like.

MARINATED VEGETABLE KEBOBS
Marinate an assortment of vegetables cut into chunks, such as peppers, tomatoes (or cherry tomatoes), zucchini, mushrooms, onions, etc in Italian salad dressing or your own blend of oil and spices. Marinate overnight in covered container in the fridge. Place the different vegetables in alternating order on wooden skewers or kebob sticks, arrange on plate and serve.

CUCUMBER SLICES TOPPED WITH AVOCADO PURÉE
Slice cucumbers on an angle to make the rounds longer. Place a dollop of avocado dip (blend or mash 1 ripe avocado with 1 Tbsp lemon or lime juice, ¼ tsp salt and chili powder, cayenne or chipotle powder to taste if desired) on each slice and garnish with a small wedge of sliced tomato or red pepper.

QUICK AND EASY SLICED CUCUMBER AND TOMATO ‘SANDWICHES’
Spread healthy Vegan mayo on cucumber slice, top with tomato slice and sprinkle with salt and pepper. Eat and enjoy your quick, healthy, low carb snack!

ASSORTED STUFFED CELERY
Season some nut butter with some savoury ingredients such as soya sauce and oriental spices, sun-dried tomatoes and Italian spices, chutney, curry or Indian spice, or a tsp or Tbsp of nutritional yeast which gives it a cheesy flavour. Try a few for a variety plate. Stuff the celery, cut into lengths or bite-sized pieces and serve.
